What we’re eating: June 1-7

Ok, the much requested dinner menu is here! Each week I will (read: try to) publish what we’re eating for dinner in hopes it will help you decide on what to get at the grocery, or inspire you to make a healthier choice!
I’m certainly no chef, but knowing that I can prepare a healthy meal that will nourish our bodies is priceless. You can learn just about anything these days. If you don’t know how to cook, just try.
Easy Mint Lemonade

As promised, super easy mint lemonade coming at you! First, I must admit, I have this thing with lemons. There’s just something about them, super refreshing and light! Lemon in my water, yes. Suja lemon love drink, yes. Hail Merry lemon cups, absolutely. Lemon in various dishes, you bet.
High Vibes

If you’ve been around long, you know that there is absolutely no time for bad vibes over here. Coming into a new year can always be refreshing and overwhelming at the same time. You feel me?!
So, here are some of my instant high vibe essentials to help keep you on track and give your life a boost in the right direction!
Easy Granola Bars

TEB loves a good bar. While, bars aren’t my personal preference, it’s important that the bars he does consume be full of nutrients+clean ingredients+real food. These fit the bill, and no, I don’t always make homemade bars.
These are SUPER easy, and you probably already have some or all of the ingredients on the list. Plus you can switch ingredients around! If you don’t like raisins, maybe add some unsweetened cherries instead.
Collagen was perfect to add for some extra protein. OX Nutrition blends better than any collagen I have EVER used, plus they source sustainably and that is important to me.
Blender brownies

Every chocoholic needs a no-fail healthier brownie recipe! This recipe was created because I had tried so many and they were either too this or too that, and honestly weren’t quite up to my standards.
These are perfect IMO. You better believe they are every chocolate lovers dream. They have been tested multiple times and are amazing. So, have at it sister! Oh, and these would be a perfect dessert to make for Thanksgiving or other holiday gatherings. If you’re hosting, you are going to need to check this post out. Thank me later!

I’m gonna give it to you straight… Thanksgiving is 3 weeks away, and you’ve still got plenty of time to prepare and pull this off if you are hosting! It’s actually my fav holiday of all. It’s like time slows down and everyone can enjoy each others company. But we all know, the holidays can be a mixed bag: incredibly joyous—spending time with friends and family, eating delicious food, taking a bit of well-deserved time off—but it can also be stressful.
Not your average brussels

Lucky for TEB (my sweet hubs), I am a pretty good cook. I grew up cooking with my mom and grandma. We were in the kitchen constantly. They were always teaching me their sweet southern ways, from canning tomato juice to shucking corn from the back of my grandpa’s pickup truck. Those memories are something I will never take for granted, and I owe it to them for my love of cooking and entertaining. As someone who loves to cook, I am constantly mixing spices and ingredients to make new flavors. Although, I personally leave out dairy, grains, and a few other things, it’s always fun to find new combinations and dishes.
