Hey, hey, happy May! I feel like this year is literally flying by! We are so happy to see all of the vendors out at the farmers market and all of the colorful fruits and veggies. Seriously, if you aren’t currently hitting up your local farmers market, it’s a great stop for lots of healthy food!
This weekend we planted our garden…last year we put way too much out, so we scaled it WAY back to just 8 plants this year! It’s a 2×8 raised garden bed.
The plan this week:
Saturday
PIZZA! We use the Simple Mills crust with Rao’s sauce, no cheese, and tons of veggies. Sometimes we will also use the Applegate turkey pepperoni’s.
Sunday
Grilled honey mustard chicken (recipe here) with roasted sweet potatoes and zucchini, and probs a mixed green salad.
Monday
Lentil pasta: loads of veggies with lentil pasta and Rao’s sauce. Easy. (We were actually supposed to have this last week and didn’t end up having it because we had tons of leftovers of everything else!)
Tuesday
Loaded spaghetti squash: with spinach, zucchini, onion, peppers + lots of spices.
Wednesday
Leftover honey mustard chicken + veggies
Thursday
Leftover lentil pasta
Friday
Leftover loaded spaghetti squash
We are big fans of healthy food and left overs. We do not “meal prep” our dinners. On Sunday we do prep all of Tim’s lunches and batch cook different foods for me. I like to mix and match my lunches throughout the week. So we will make a protein and carb for me on Sunday to mix and match with other things!
