What we’re eating: April 25-30

Can you believe it’s basically the end of April?! Honestly, I really can’t! I hope you have been using this weird time to think about and perfect your routines at home. Maybe it’s your skincare, or de-cluttering, or getting in the habit of planning your meals. Progress is progress. If you’re new here, for dinner my rule is cook once, eat twice. Well, because that makes things easier!

 

The plan this week:

Saturday

Grilled chicken enchilada casserole. This is so super easy. In the colder months I will make the chicken in the slow cooker, now that it’s warm, it’s for sure getting grilled. In a big pan mix up: cauliflower rice, black beans, frozen spinach (duh, greens) with tomato sauce and whatever spices you like. When the chicken is ready  you can either cut it up and mix in or just put it on top. We like to serve it with guacamole.

Sunday 

Whole roasted chicken with sheet pan veggies. We will do zucchini, squash, peppers, onion, and sweet potato.

Monday

Veggie lentil pasta: loads of veggies with lentil pasta and rao’s sauce. Easy.

Tuesday

Veggie loaded omelettes with AWG bakery toast and chicken sausage

Wednesday

Leftover chicken enchilada caserole

Thursday

Leftover roasted chicken and veggies

Friday

Leftover veggie pasta
