Happy first day of spring, y’all! We’ve almost made it to warmer weather…at least here in KY! You may be struggling with what to eat or make because of Covid-19. I get it, times are weird right now.
Now more than ever is a time to pay attention to what you’re eating. Making sure you are consuming foods that are nourishing and boost your immune system vs tear it down. Think: lots of fruits and veggies, lots of greens, less sugar and processed foods. You can do this!
Take a quick inventory of what you already have on hand before heading to the grocery. I know, I know…like I said weird/tough times right now, we actually have to GO to the store because pick up and delivery are cancelled.
So to minimize time spent in public, make a plan and make a list. Please, and duh, wash your hands!
Our plan this week:
Saturday
Lentil pasta with Rao’s pasta sauce and a big salad
Sunday
Tacos with siete tortillas…I will actually have a taco salad, TEB will have tacos. Lots of veggies here!
Monday
Chicken bowls: make chicken in IP or slow cooker then roast some veggies to make a bowl. We will do eater sweet potatoes, cauli rice, or quinoa topped with avocado, onion, and tomatoes. Maybe some buffalo sauce.
Tuesday
BLT’s: with AWG junk free bread topped with an egg
Wednesday
Leftover lentil pasta and salad
Thursday
Leftover tacos/taco salad
Friday
Leftover chicken bowls
Currently not using grocery deliver since it’s cancelled. Will for sure resume once it’s back!
