What we’re eating: March 14-20

Hello there! Happy weekend to you! As always, you’ve come to the right place if you need some fresh and easy meal ideas!

I can see you now, you might be all gloom and doom because your store if out of TP. I get it. At least you can (hopefully) grab some food to have on hand and get through this!

Still having a hate relationship with my Instant Pot because it’s not making things so instant. Most things I try end up needing more time. So, there’s that. Gonna give it another go next week.

The plan this week:

Saturday

Instant Pot honey mustard chicken with red potatoes and a salad. Using THIS recipe.

Sunday

Buffalo chicken salad: spring mix, buffalo chicken, tomatoes, avocado, roasted sweet potatoes, onion, and a light drizzle of primal kitchen ranch

Monday

Enchilada casserole: cauliflower rice, black beans, ground turkey, tomato sauce and seasonings all mixed together topped with avocado and onions and to be honest probs some greens too!

Tuesday

Breakfast for dinner: omelettes and  toast with AWG junk free bread and blueberries

Wednesday

Leftover IP honey mustard chicken

Thursday

Leftover buffalo chicken salads

Friday

Leftover enchilada casserole
