Keeping it simple over here this week TEB is down since he had surgery on Monday! So, that basically means I have zero help! So to make things super easy, we are having some tried and true dinners this week!
Ok, the plan this week:
Taco salad: black beans, sautéed peppers and onions with spring mix, tomatoes, and guacamole
Quinoa bowls: with sautéed kale and squash, and roasted chickpeas. I’ll add avocado, onion and tomatoes.
Creamy pasta: chickpea pasta with loads of veggies added in with rao’s sauce and a little coconut milk mixed in. We will have this with a big salad!
