What we’re eating: October 11-18

It’s always fun to switch our food up with each new season! Although, we are a few weeks into fall, it isn’t quite sweater weather over here! So, we haven’t pulled the soup recipes out just yet! You know we love a good salad, and since it’s fall, I thought we’d do a seasonal fall salad! In the spirit of keeping things easy and not super complicated, we have several simple fall meals this week!

Over on instagram stories this week it was so much fun decoding your favorite fall recipes! If you have more recipes you want to know what ingredients you could switch to a healthier more nutritious ingredient, send them my way. I will decode it and send you my recommendations!

 

 

Saturday

Pizza night! We use simple mills crust, rao’s marinara, TONS of veggies, applegate turkey pepperonis, and no cheese! It’s amazing!

 

Sunday 

Salsa chicken with sweet potato + kale hash

Monday

Fall Salad: spring mix, chicken, apple, raisins, roasted butternut squash, pecans, red onion with balsamic vinegar and olive oil drizzled on top!

 

Tuesday

Spaghetti and salad: red lentil pasta, ground turkey, Rao’s marinara with spinach mixed in

 

Wednesday

Fall salad

Thursday

Leftover salsa chicken with sweet potato + kale hash

Friday

Leftover spaghetti

 

Pro tip, sweet potato hash: instead of using a hand held grater, I like to use my Veggetti with the ribbon blade! Makes it super quick!
