What we’re eating: September 22-27

Someone please tell me how it is almost the first day of FALL?! This week we are making some easy weeknight meals! These simple ideas are ones we typically always have on rotation!

Speaking of crock pots…thinking we may need an instant pot in our near future. One of our crockpots cracked, and I MUST have two, so might as well get a multi-function instant pot, right?! If you have one, please message me and tell me all about it! Need all the details!

BBQ chicken stuffed sweet potatoes. This is literally the easiest meal. Both the chicken and sweet potatoes get cooked in the crockpot. We will top with avocado, onion, tomatoes, and a drizzle of tessemaes ranch.

Chicken fajita salad: I will sauté chicken, peppers, onions, and seasonings and put that on top of chopped spring mix. We will add tomatoes, avocado, salsa, and onion.

Tuscan herb zucchini noodles: ground turkey mixed with zucchini noodles, kalamata olives. red pepper, and tuscan herb olive oil.

Leftover stuffed sweet potatoes

Nachos! Leftover chicken fajitas but this time on siete chips!

Pizza night! Simple mills almond flour crust is our go-to, topped with Rao’s marinara and TONS of veggies!

Pro tip, planning: when you are planning out your dinners for the week, go ahead and plan out your lunch options as well. For example, the ground turkey from Tuesday night will also be used for a couple of my lunches next week. We are all about maximizing time over here!

Tag me on instagram with your easy weeknight meals, @sarahdbridgeman! Would love to see what you create! If you need more dinner ideas, check out the other food posts here!
