Back with this what we’re eating series after a few weeks off! Nothing ground breaking happening over here, just simple meals with simple ingredients! We are enjoying the last few weeks of peach season over here with a half bushel box of peaches, oh my they are so good!
On to this weeks dinners!
Sunday
Turkey burgers with sweet potato fries.
Monday
Berry salad with grilled chicken, strawberries, blueberries, pumpkin seeds, red onion, and avocado. This pairs nicely with my homemade ACV dressing recipe on this post!
Tuesday
Mexican bowls: Grilled chicken with cauli rice, black beans, pepper, onion, topped with avocado and tomatoes. When we make the chicken for the salads we will make enough chicken for this too! Super easy and customizable, you can basically make anything into a bowl.
Wednesday
Leftover turkey burgers with sweet potato fries.

Pro tip, burgers: When making burgers, they stay together really well if you will add 1 tablespoon of dijon mustard when you’re mixing the spices in! We do garlic powder, pink salt, and pepper!
Pro tip, fries: slice super thin, coat with avocado oil and spices, and the key here is to layer in a SINGLE layer making sure they are not over lapping. That will cause them to steam rather than cook like fries and crisp up! I typically do 400 degrees for 25-30 min. or until crispy. Oh, and these reusable baking mats will change your life! No lie!
