Coming at you with some new ideas for easy meals! This week what we’re eating looks a little different with a new take on chicken enchiladas! We have also been obsessed with peaches from the peach truck (the best in my opinion) and watermelon. We have been knocking one watermelon out in just a couple of days. They are so good for you!
Ok, let’s get to it with this weeks meals!
Dinner with TEB’s mom!
Chicken enchilada casserole made with cauli rice, black beans, pepper, onion, topped with avocado and tomatoes. I will cook the chicken in the crockpot all day Sunday to shred for this!
Kale salad with raisins, pumpkin seeds, red pepper, and onion. I will make my amazing apple cider vinaigrette. I will put the recipe below! I will also make some sweet potatoes to go with this salad!
Zucchini spaghetti: I will spiralize zucchini with our veggetti and lightly sauté it. For the sauce, I use a jar of organic marinara from Aldi with no added sugar and ground turkey from Buy Ranch Direct as well as chopped spinach.

I am heading out of town, so TEB will have leftover zucchini spaghetti.
Pro tip: If you have a meal you can cook in the crockpot, do it. This week I plan to put the chicken in the crockpot on Sunday for the enchiladas.
Easy ACV dressing: 2 tbsp apple cider vinegar, 2 tbsp dijon mustard, 1 tsp garlic powder, 1 tbsp avocado oil, 1 tbsp raw honey. Mix together with a fork and use on salads or as a marinade! You are warned, it’s addicting!
Snack idea: If you are into smoothies, this strawberry maca one is amazing! It’s been on repeat over here!
