What we’re eating: June 29-July 5

Y’all, I was getting a little bored with my dinner ideas, so I really stepped outside of my comfort zone for what we’re eating this week! So, fresh food ideas coming at you! Still keeping things super simple with minimal ingredients!

If you didn’t already know, I love grabbing what I can at our local Aldi! They have a good selection of organic produce at amazing prices! I frequently do Aldi hauls over on my insta stories! Just yesterday I shared my huge organic haul that only totaled $65! I do still have to make a stop at Kroger, and we order our meat from Buy Ranch Direct. But, all in all, if you are looking to save some money on your grocery bill, shopping at Aldi is a phenomenal way to do so! Oh, and I put together a list of my favs from Aldi a while back that you can check out here! 

Saturday

Salmon salad with roasted brussels+sweet potatoes, turkey bacon, onion, avocado and tomato. I will make a house vinaigrette dressing using things I already have on hand!

Sunday

Teriyaki chicken made with coconut aminos+maple syrup with a side of quinoa and roasted squash

Monday

Salmon salad again. We will make these fresh each time! But, it’s super quick!

Tuesday

Tacos made with with buy ranch direct ground turkey, siete tortillas and guacamole. (I typically have a taco salad bowl with one taco)

Wednesday

Black bean burgers with roasted zucchini fries

Thursday

Leftover teriyaki chicken made with coconut aminos+maple syrup with a side of quinoa and roasted zucchini squash

Friday

Leftover black bean burgers, I will make some fresh zucchini fries too! On Wednesday I will go ahead and chop enough to have for this meal too!

 

Pro tip: If you have a meal you can cook in the crockpot, do it. This week I plan to put the teriyaki chicken in the crockpot!
