Happy first day of SUMMER! Not sure how we blinked and got here! Whoa, time flies. Back for a another week of what we’re eating! This is hopefully helping you will dinner ideas and keeping your grocery bill in check with simple ingredients!
We will be probably (like 90% sure) be eating dinner with TEB’s mom one day this weekend, so I am just going to leave Saturday off this week! I’ll throw together a quick salad if not!
We also didn’t end up eating our veggie bowls from last week, so I’ll be creating something different with those ingredients this week! One less thing go buy at the grocery!
Sunday
Salsa chicken stuffed sweet potato topped with avocado, tomatoes, and onion
Monday
Veggie tacos/salad: black beans, red pepper, onion, squash, with all kinds of seasonings topped with mango salsa. I will put these in a siete cassava flour tortilla-I typically have one and also make a salad.
Tuesday
Spaghetti: made with green lentil pasta, buy ranch direct ground turkey, and organic marinara sauce. Plus, a salad because, greens! Super quick and easy.
Wednesday
Leftover salsa chicken stuffed sweet potatoes
Thursday
Leftover veggie tacos. I will make fresh mango salsa
Friday
Leftover spaghetti. I will make fresh salads
Pro tip: cook your potatoes in the crock pot! Throw them in and forget about them!
Salsa Chicken tip: Also put this in the crockpot! 1 jar/container of salsa + 1 pound of chicken = the easiest chicken ever to make. Low for 8hrs or high for 4. Shred with a fork!
