Easy Mint Lemonade

As promised, super easy mint lemonade coming at you! First, I must admit, I have this thing with lemons. There’s just something about them, super refreshing and light! Lemon in my water, yes. Suja lemon love drink, yes. Hail Merry lemon cups, absolutely. Lemon in various dishes, you bet.

I planted mint in the back of one of my flower beds 3 years ago and it’s been so nice to be able to walk out there and grab what I need. Recently, I decided to make some very simple and easy mint lemonade and it sounded perfect in it! Enjoy!

Easy Mint Lemonade

Ingredients

  • 1/2 c lemon juice
  • 10 leaves of mint
  • 20-24 oz filtered water
  • 1 packet stevia or sweetener of choice
  • lots of ice

Instructions

  1. add all ingredients to a big jar and mix together!

Toasted Coconut Granola

Hello and happy Monday! I hope you had a nice, refreshing weekend! We always do some batch cooking on Sunday as well as prepare TEB’s lunches for the week! So, yesterday, I made this yummy toasted coconut granola to have on hand for various things this week!

A lot of granolas at the grocery store tend to have lots of added junk in them, and are often $12-15. There are a couple of brands I trust, but 9 times out of 10, I’d rather make my own if I can!
